Simple Egg Salad
A simple and delicious egg salad recipe.
Ingredients
- •6 null eggs (large)
- •0.25 cup mayonnaise (null)
- •1 tsp Dijon mustard (or yellow mustard)
- •1 tsp lemon juice (optional)
- •1 tbsp chives (or green onions)
- •1 tbsp celery (finely diced)
- •to taste salt
- •to taste black pepper
- •optional Paprika (for garnish)
Instructions
- Boil the eggs: Place eggs in a pot, cover with water, and bring to a boil. Once boiling, remove from heat, cover, and let sit for 10-12 minutes. Then transfer to an ice bath and let cool.
- Peel and chop: Peel the eggs and chop them into small pieces.
- Mix: In a bowl, combine the chopped eggs with mayonnaise, mustard, lemon juice, chives, celery, salt, and pepper.
- Adjust seasoning: Taste and adjust salt and pepper as needed.
- Serve: Enjoy on toast, in a sandwich, with crackers, or over lettuce.
