Cream Rose Sauce on Noodles
Rose sauce is a fantastic way to breathe life into your pasta dishes! There is something about the combination of tomatoes with cream that just creates magic when they come together. This fabulous sauce can accompany any of your favorite pastas.
Ingredients
- •4 lbs Very ripe roma tomatoes (peeled)
- •4 tablespoons Unsalted butter
- •0.5 White or vidalia onion (cut into quarters)
- •2 cups Heavy cream
- •to taste Salt and pepper
Instructions
- Place the tomatoes in a food processor and blitz until pureed.
- Warm a medium saucepan over medium-low heat for 2 minutes. Add the butter and raise the heat to medium. Once the butter melts and stops foaming, add the onion and a pinch of salt and saute unit begins to sizzle. Reduce the heat to low, cover the pan. and cook the onion, stirring occassionally, until the onion is soft, about 10 minutes.
- Add the pureed tomatoes and a few pinches of salt. Bring to a boil, reduce the heat to low, and simmer until it has thickened and the flavor is to your liking, about 20 minutes. Remove as much of the onion as you can with a slotted spoon.
- As the tomato sauce cooks, place the cream in a small saucepan and cook over low heat until it has reduced by about half. Remove the pan from heat and set the cream aside.
- Stir the reduced cream into the tomato sauce, season it with salt and pepper, and serve.
