German Pancakes
This recipe creates a delicious German pancake, also known as a Dutch baby pancake, baked in a skillet or casserole dish until puffed and golden.
Ingredients
- •3-4 T. butter
- •3 eggs
- •90 grams (3/4 c.) flour
- •180 grams (3/4 c.) milk
- •1 T. sugar
- •dash nutmeg
- •1/2 tsp. salt
- •lemon juice - for serving
- •powdered sugar - for serving
Instructions
- Melt the butter in a 10" cast iron skillet or 9x13" casserole dish in 425°F oven.
- Blend eggs, flour, milk, sugar, nutmeg, and salt.
- Add the batter to the hot pan and bake for 20 minutes until puffed and golden.
- Reduce heat to 300°F and bake 5 minutes longer.
- Cut into wedges and serve with lemon juice and powdered sugar.
