Special Creamed Corn
A creamy and flavorful corn dish with a hint of spice and a cheesy, crunchy topping.
Ingredients
- •frozen Corn (5 cups)
- •1/3 cup All-purpose flour
- •1 tsp Salt
- •1/4 cup Sugar
- •1 Dash White pepper
- •1/3 cup Butter
- •1 cup Heavy whipping cream
- •grated Parmesan cheese (1/4 cup)
- •1 cup Whole milk
- •to taste Pesto
- •1 Jalapeño (or to taste ( I use 2-3 and remove the insides))
- •1/4 cup Panko breadcrumbs
Instructions
- In a saucepan, melt butter over medium heat. Stir in flour until smooth. Gradually add cream, milk, sugar, salt and pepper. Add chopped jalapeños. Bring to a boil; boil and stir for 2 minutes. Add corn; heat through. May need to add more milk for preferred consistency.
- Transfer to an ungreased 1-1/2-qt. broiler-proof dish. In a squeeze bottle or baggie with corner cut, squeeze pesto on top of corn mixture all over be generous. Mix Parmesan and panko in a bowl then sprinkle on top of corn. Broil 5 in. from the heat for 3-5 minutes or until lightly browned and bubbly and golden.
