Blackberry Pancakes
Fluffy pancakes with juicy blackberries, topped with powdered sugar.
Ingredients
- •3 eggs (separated)
- •½ cup (120 ml.) milk
- •¾ cup (90 g.) flour
- •¼ tsp. salt
- •fresh blackberries
- •butter (for greasing griddle)
- •powdered sugar
Instructions
- Beat egg whites until stiff; set aside.
- In a separate bowl, beat yolks.
- Add milk, flour, and salt.
- Fold in beaten egg whites.
- Pour ⅓ cup of batter onto medium-hot greased griddle.
- Top with berries, gently push berries into batter. Cook slowly for 5 minutes. Flip and cook until done.
- Top with powdered sugar and serve warm.
