Easy Oven Roasted Potatoes
Simple oven roasted potatoes make a perfect side dish! Make these seasoned potatoes, they go with any meal.
Ingredients
- •2 pounds red potatoes (or yellow or Yukon gold potatoes)
- •2 T. olive oil
- •1 tsp. garlic powder
- •3 T. chopped fresh herbs: rosemary-parsely-thyme-basil (or 2 tsp. dried herbs)
- •½ tsp. paprika
- •to taste kosher salt
- •to taste black pepper
Instructions
- Preheat oven to 425°F.
- Scrub potatoes (do not peel them). Dice into 1” cubes.
- If time allows, soak potatoes in cold water for up to 1 hour. (This removes starch and makes for a fluffier potato). Drain and dry potatoes, if required.
- Toss potatoes, olive oil, herbs, and seasonings
- Place on a baking sheet and bake for 30-35 minutes until browned and tender.
