Authentic Mexican Rice
Restaurant-Style Mexican Rice
Ingredients
- •3 T. olive oil
- •1 cup long-grain rice
- •½ tsp. salt
- •½ tsp. ground cumin
- •¼ tsp. chili powder
- •¼ tsp. garlic powder
- •¼ tsp. onion powder
- •¼ tsp. crushed red pepper
- •¼ tsp. dried oregano
- •¼ tsp. paprika
- •½ cup (4 oz.) tomato sauce
- •2 cups chicken broth
Instructions
- Heat oil in a large saucepan over medium-high heat, once oil is hot, add rice. Cook, stirring constantly, until golden, about 5 minutes.
- While rice is cooking, sprinkle with salt, cumin, chili powder, garlic powder, onion powder, crushed red pepper, dried oregano and paprika.
- Stir in tomato sauce and chicken broth; bring to a boil. Reduce heat to low, cover and simmer for 20 to 25 minutes. Fluff with a fork.
