Blue Ribbon Honey Caramel Corn
This recipe creates a crisp and delicious honey caramel corn, perfect for snacking.
Ingredients
- •about 18 cups popped popcorn
- •¼ cup honey
- •1 cup brown sugar
- •½ cup (1 cube) butter
- •½ tsp. salt
- •½ tsp. baking soda
Instructions
- Combine honey, brown sugar, butter, and salt in a large microwave-safe bowl.
- Bring to a boil, once boiling, boil for 3 minutes, stirring after every minute.
- Remove brown sugar mixture from microwave and stir in baking soda. Mix well.
- Pour over popcorn in a large paper grocery bag. Coat as well as possible.
- Fold bag down and put popcorn back in microwave.
- Cook for 3 to 3½ minutes, shaking bag every 30 seconds to coat popcorn well.
- Spread out caramel corn on parchment or greased cookie sheets. As caramel corn cools, it becomes quite crisp.
- Break into pieces and store in Ziploc bag or other air-tight container.
