Chili con Carne
Hearty chili with ground beef and three kinds of beans.
Ingredients
- •3 lbs hamburger
- •3 T vegetable oil
- •1 c onion (coarsely chopped)
- •2 T garlic (minced)
- •4 T chili powder
- •1 tsp oregano
- •1 tsp ground cumin
- •1 tsp red chili pepper
- •6 oz can tomato paste
- •4 c beef stock
- •1 tsp salt
- •black pepper
- •1 can black beans
- •1 can pinto beans
- •1 can kidney beans
- •7 oz can fire-roasted diced green chilies
- •1 can petite diced tomatoes in juice
- •Sour cream
- •shredded Cheddar cheese
Instructions
- Heat oil in large stock pot. Cook hamburger on high heat in oil. Stir until meat is browned. Add onion & garlic, sauté for 4-5 minutes, stir frequently.
- Add chili powder, oregano, cumin, and red pepper flakes. Add the tomato paste, pour in the beef stock and mix all ingredients together with a large spoon. Add salt & pepper. Bring to a boil, stir occasionally.
- Rinse & drain beans under cold water in a strainer. Add drained beans, green chilies and petite diced tomatoes to chili and reduce heat to simmer on low 60-90 minutes.
- Serve with sour cream and shredded cheddar cheese as optional toppings
