Ingredients
•1.5 cups Arborio rice
•1/2 cup dry white wine
•3.5 cups chicken broth (warm)
•1 small yellow onion (finely diced)
•2 cloves garlic (minced)
•3 tablespoons butter (divided)
•1 tablespoon olive oil
•3/4 cup Parmesan cheese (freshly grated)
•1 teaspoon salt
•1/4 teaspoon black pepper
•for garnish fresh parsley
Instructions
Set Instant Pot to Sauté mode. Heat olive oil and 1 tablespoon butter. Add onion and cook until translucent, about 3 minutes.
Add garlic and cook for 30 seconds. Add Arborio rice and stir for 1 minute to toast the grains.
Pour in white wine and stir until mostly absorbed.
Add chicken broth and salt. Stir once to combine.
Lock the lid, set valve to sealing. Cook on High Pressure for 6 minutes.
Quick release the pressure. The risotto may look soupy — this is normal.
Stir in remaining 2 tablespoons butter and Parmesan cheese. Keep stirring for 1-2 minutes as the risotto thickens to a creamy consistency.
Season with pepper and additional salt if needed. Serve immediately, garnished with fresh parsley and extra Parmesan.
