•4 Italian sausage links (sweet or hot)
•3 bell peppers (assorted colors, sliced)
•2 medium zucchini (sliced into half-moons)
•1 large red onion (cut into wedges)
•1 pint cherry tomatoes
•2 tablespoons olive oil
•1.5 teaspoons Italian seasoning
•1 teaspoon garlic powder
•1 teaspoon salt
•1/2 teaspoon black pepper
•for serving crusty bread
Instructions
Preheat oven to 400°F (200°C). Line a large sheet pan with foil or parchment paper.
Toss bell peppers, zucchini, red onion, and cherry tomatoes with olive oil, Italian seasoning, garlic powder, salt, and pepper.
