•2 pounds ground turkey
•1/3 cup breadcrumbs
•1 egg
•3 cloves garlic (minced)
•1.5 teaspoons Italian seasoning
•1.5 teaspoons salt
•4 cups broccoli florets
•2 medium sweet potatoes (cubed)
•2 red bell pepper (diced)
•2 tablespoons olive oil
•1 cup marinara sauce (for serving)
Instructions
Preheat oven to 400°F (200°C). Line two sheet pans with parchment paper.
Mix ground turkey, breadcrumbs, egg, garlic, Italian seasoning, and 1 teaspoon salt. Form into 25 meatballs.
Place meatballs on one sheet pan, spaced evenly apart.
Toss sweet potatoes, broccoli, and bell pepper with olive oil and remaining salt. Spread on the second sheet pan.
Bake both pans for 20-25 minutes, flipping meatballs and tossing vegetables halfway through.
Let cool slightly. Divide meatballs (5 per container) and roasted vegetables among 5 meal prep containers.
